In Colorado he worked as a Food & Beverage Director at Castle Pines Golf Club. He also worked as a beverage manager at Hotel Jerome in Aspen. In 1999, Tomas opened his first Cafe Prague, in the historic downtown of Georgetown, CO. In 2004 he moved Cafe Prague from its Georgetown location to a new one in Morrison, CO. Morrison, CO is known for the Red Rocks Amphitheater and welcomed the restaurant with open arms. In addition to owning Cafe Prague, Tomas worked both as a Chef and a business owner of Euro Grill of Georgetown, CO, and Prague of Evergreen, CO. Prague in downtown Sarasota is his newest restaurant and one in which he takes a lot of pride. At Prague, the cuisine served is a mix of European and American. The menu offers some traditional dishes in addition to some European specialties such as fresh fish and wild game.
